Marinated Zucchini and White Bean Salad
2 medium zucchini halved lengthwise and sliced into 1/2 inch pieces
1 14 oz. can of while beans, drained & rinsed
juice and grated rind of 1 lemon (unwaxed) 3-4 tbsp.
Garlic Festival Garlic Olive Oil or Garlic Chili Olive Oil

Cook the zucchini in salted boiling water briefly (2-3 mins.) Drain and refresh under cold running water. ~ Place the zucchini in a bowl with the beans and add the remaining ingredients, tossing gently.
Optional ~ add a tbls. of fresh chopped herbs such as basil, oregano or mint. Each will add it's own distinctive flavor. Chill and serve as a salad or accompanying meat fish or chicken.
