Roasted Tomato, Basil & Garlic Sauce

 

Summer is the season of harvest for tomatoes, basil and garlic.  It is also the time to preserve those summer fresh tastes for those cold rainy (or snowy) days.  This delicious recipe is simple even for those who don't have time to can, as you can freeze it in freezer bags for future use.

Ingredients
Lots of whole fresh tomatoes, peeled, cored and cut into quarters or eighths
Coarsely chopped fresh basil
Lots of chopped fresh garlic

Directions
Fold basil and garlic into tomatoes.  Add 2 to 4 cups of olive oil.  Place in a large roasting pan sprayed with non-stick spray.  Place in 400 degree oven and cook, stirring occasionally until the tomatoes begin to caramelize (2-5 hours, depending on the number of tomatoes).  Remove from the oven, cool slightly, portion and place in freezer bags and freeze.

Later, you can use this wonderful aromatic sauce for pasta, polenta, over chicken, fish or whatever suits your fancy.
