Garlic Festival Honey Mustard Chicken

(A favorite with kids.. Hannah approved!)
6 boneless skinless chicken breasts. (or thighs)
4 Tbs. butter
3 Tbs. fresh lemon juice
3 Tbs. GF Sweet & Spicy Garlic Mustard
2 Tbs. Honey
Preheat oven to 375º. Place chicken breasts in a baking dish. Melt the butter & mix in the mustard, lemon juice, & honey. Pour over chicken & bake for 40-45 mins.
( I also, as above, sprinkle the chicken with Garli Garni)
Serve with rice or Quinoa pilaf or mashed potatoes.

Happy 2012!!

The HOLIDAYS are over. Yea!!!
Hopefully we all survived. However, like me, some of you probably didn\'t
survive unscathed. My waistband is just a little bit snugger than it was thanks
to the overabundance of good food. But now it\'s time to get back on a
healthier diet and lose those extra pounds or inches.
This is a hearty, healthy recipe that will fill you up as well as warm you up on
chilly winter days.
Easy Black Bean Chili
1 quart of beef or vegetable stock.
1 quart jar of Garlic Festival Salsa
1 Tbs. olive oil
1 lg. onion, diced
1-2 red or yellow bell peppers, large dice
3 Tbs. chili powder
1 tsp. cumin
1 tsp. oregano
1 bay leaf
1 Tbls. Garli Garni
2 15 oz. cans black beans
1 15 oz. can garbanzo beans
1 C brewed coffee
Chopped fresh cilantro & grated cheddar cheese & a small dab of low fat sour cream for garnish
if desired. Nice served with corn bread or polenta.
Heat oil in a lg. heavy saucepan. Sauté onions & peppers until
soft. Add herbs & sauté briefly. Add other ingredients, cover and
simmer for approximately 30 minutes. Turn off heat and let stand
a few minutes. Adjust seasonings and serve with garnish.

Thanksgiving Appetizers

Easy & Delicious Appetizers
Thanksgiving is a time of little dietary splurges & entertaining of family & friends. Following are a few simple recipes to make entertaining easy & relaxing.
~ Place a round of Brie cheese in a pie dish, spoon some Garli Glaze over the top and bake at 350º for 10 mins. until cheese is heated through. Garnish & serve with baguettes or crackers.
~ Mix Sweet & Spicy Garlic Mustard or Garlic Jalapeño Mustard with an equal amount of sour cream. Mix in a dash of Brandy or Cognac (optional) and heat briefly in the microwave. Serve this as a dip for meatballs, browned sausage, shrimp etc. Also great with ham, roast beef, chicken wings etc.
~ Process a jar of Garlic Stuffed Olives in the food processor until finely chopped. Pour in a medium skillet with ½ C. Xtra virgin olive oil, a Tbls. of orange zest and approx. 2 Tbls. capers (optional). Heat through and pack in a crock or bowl and chill if not used immediately. Serve at room temperature with some softened cream cheese and crackers or baguettes.
Remember: Food always tastes better when attractively served so use your nice dishes and garnish with fruit , vegetables or edible flowers.

Garli Ghetti Pull Apart Rolls

- 2 packages of refrigerator biscuits
- 1/2 stick butter or margarine
- Garli Ghetti seasoning
Remove biscuits from tube and cut into quarters. Roll pieces into balls. While rolling, melt butter in a skillet and add a liberal amount of Garli Ghetti.
Garli Ghetti is one of our family favorites. It makes the BEST garlic bread ever!! We don\'t even bother with the small jar anymore.\" ~Iklipfel, San Clemente, CA
Roll dough balls in buttery mixture until coated and place in an oven safe pan. Sprinkle with Garli Ghetti and a bit of Paremesan cheese (if desired). Bake according to package instructions but increase time by 5-7 minutes. Remove when raised and golden brown. Serve & Savor!!

Roasted Pickled Garlic!!

We discovered a new DELICIOUS use for pickled garlic.
Try roasting a bunch of Teriyaki Pickled Garlic on a sheet pan at 375 for about 20 minutes or until starting to soften. This is great squished on bread, tossed with pasta, or sprinkled in a salad. Try it with other pickled garlic flavors as well!!

Great Gallopin’ Garlic Grilled Chicken

4 Tbls. Mesquite Grill or Garli Garni
½ C Garlic Festival Grill & Marinade
6 chicken breasts or 12 thighs (if lg., cut breasts in half)
1 lg. zip lock bag
Open bag and place seasonings in bag. Rinse & pat dry chicken & place in bag with seasonings.
Toss until thoroughly coated. Add marinade, and toss again. Force air out of bag, seal and place in refrigerator for at least ½ hr. Prepare grill by oiling clean rack and preheating. Remove chicken from bag and place on grill breast side down. Sear chicken on both sides for approx. 4 mins ea. & then continue cooking over indirect heat for 18-20 mins. or until internal temp. is 165º F.

Easy Garlic Festival Gazpacho

1 jar GF mild Salsa (9 oz)
1/2 lg cucumber (or 1 sm); peeled, halved lengthwise, seeded and roughly chopped.
1 red, green or yellow bell pepper; cored, seeded and chopped
1/4 C finely chopped red onion
3 C V8 or tomato juice
1/4 C wine vinegar
1/4 C extra virgin olive oil
1 tsp fresh ground black pepper
Combine all ingredients in a large non-reactive bowl. Mix and chill before serving. Serve in bowls and garnish with a small dollop of sour cream or plain yogurt.
*Gazpacho is a cold Spanish soup made with tomatoes and raw vegetables, sometimes described as \"liquid salad\". Perfect for hot summer days and the bounty of Farmers Markets.

Grilled Garli Corn on the Cob

Prepare your grill, gas or charcoal, with direct, high heat, about 550°F.
Place corn in their husks on the hot grill. Cover. Turn the corn occasionally, until the husks are charred on all sides, about 15 to 20 minutes.
While corn is grilling, melt a stick of butter and add Lemon Garli Garni (or regular Garni) until well mixed.
Remove corn from grill. Let sit for 5 minutes. Use a hand towel to protect your hands while removing the silks and charred husks from the corn.
Serve corn and \"paint\" on hot butter mixture with a BBQ brush or new cheapie paintbrush. Delicious!!

Meatloaf with Garli Glaze & Bacon Sauce

This may be the best meatloaf you’ve ever tasted!
It was a favorite in our restaurant. But…..it wasn’t the meatloaf
itself; it was the Sauce. In this case it’s featured on a turkey meatloaf
but use it on your favorite meatloaf.
Turkey Meatloaf:
• 1 lb ground turkey
• 1 egg
• ¼ C bread or cracker crumbs
• ½ C shredded carrot
• 1 Tbls. Garli Garni
• ¼ C chopped onion
Mix all thoroughly in a bowl and place in a greased loaf pan.
Bake in a preheated 350º oven for approx. 30 mins.
Garli Glaze & Bacon Sauce
• ½-3/4 C chopped onion
• 3 slices chopped bacon
• 1/3 C apple cider vinegar
• ¾ C Garli Glaze
Fry bacon in skillet until it is about half way crispy.
Add onions and continue cooking until onions
are browning. Drain. Return to low heat and add Garli Glaze
and vinegar. Cook for approx. 5 mins. Spoon over sliced meatloaf
and serve extra on the table.

Black Bean Enchiladas (Vegetarian!)

• 1 C low fat sour cream or yogurt
• 2 chopped chipotle chilis in adobo
• 2 cans black beans, rinsed, & drained
• Cooked Quinoa (optional)
• 2 C thawed frozen corn or canned (drained)
• 8 flour tortillas or 12 corn tortillas
• 1 C shredded Monterey Jack or Cheddar cheese
• 2 C GF Spicy or Mild Salsa
• cooking spray
Preheat oven to 350º .
Chop chilies and mix with sour cream or yogurt.
Chop 1 can of beans in food processor until finely chopped.
Add chopped beans, whole beans & corn to yogurt. Also add
1 C quinoa (optional)
Spoon bean mixture down the center of tortillas and roll up
placing seam side down in a baking dish sprayed with cooking spray.
Spread the Garlic Festival Salsa over the top . (Spicy salsa will
make very spicy enchilades) Sprinkle with cheese, cover and bake
for 20-30 mins.

~ Bacon, Tomato & Garlic Spread ~

• ½ lb. regular or low fat cream cheese
• ½ C Spicy Herb Pickled Garlic
• 3-4 pieces bacon fried crisp & crumbled
• ¼ C dried tomatoes in oil, drained
Place bacon, garlic & tomatoes in a food processor with blade. Chop briefly. Add cream cheese broken into pieces.
Process until all ingredients are incorporated. Add a little milk or yogurt if needed to thin. Serve with crackers, pita or bagel chips.

Garli Goop- More than just a dip!

Many people know Garli Goop as a dip mix but it is so much more!
It is a delicious concentrated seasoning that is great as a rub for meats. Simply sprinkle some on the surface of your meat and rub it in. Allow to rest for 30-60 minutes and cook OR mix with ground meat for tasty burgers and meatloaf.
It’s highly portable and great for camping or cooking out.
Another trick for adding great flavor to meats is to use Goop for poultry brines.
For each gallon of cold water use 1 cup Kosher salt, 1/2 cup sugar and one packet of Garli Goop. Add some lemons or oranges (squeeze juice into brine) and throw in the citrus. Submerge poultry in brine to cover in a clean bucket or pot and refrigerate or keep in a cold place overnight. Rinse bird, discard brine and cook as you normally would.
Garli Goop can also be made into other “dips” or appetizer spreads. Try making some zesty hummus by combining 1/2 a packet of Chipotle Lime Goop with a can of garbanzo beans, 1/4 cup olive oil and a splash of lemon juice.
Jazz up guacamole by mixing 1/2 packet of Garlic Sun Dried Tomato Goop with a mashed up avocado, splash of lime juice and a touch of chopped cilantro. Olé!

Garli Garni Quinoa Pilaf

Pronounced Keen-wah for those who are new to this wonderful grain (seed). Unlike most other grains, it is a source of whole protein & is a great replacement for rice. It has a great fluffy texture when properly prepared , comes in different colors and has a great nutty flavor.
• ½ onion, minced
• 1 tsp. olive oil
• 1 C Quinoa, rinsed & drained
• 11/4 C chicken or vegetable broth
• 1 Tbs. Garli Garni • 2 Tbs. minced fresh herbs such as basil, thyme, cilantro, etc.
• ½ C frozen baby peas
Combine the onion & oil in a med. saucepan. Cook over med. heat for approx. 10 mins., stirring occasionally. ~ Stir in the quinoa & cook over med. heat until lightly toasted. ~ Stir in the broth, herbs, and Garli Garni, reduce heat & simmer for 16-18 mins. Stir in the peas, cover pot a let sit for 10 mins. ~ Fluff with fork & serve as your side dish.

Garli Garni 'Choke

As many med. artichokes as you like
X virgin olive oil
Garli Garni
Lemons, halved
Trim & prepare artichokes and rinse with water. Place each artichoke on a square of heavy foil & spread the leaves open. Drizzle on the olive oil (about 1 Tbls) and squeeze half a lemon on each. Sprinkle on the Garli Garni to taste (approx. 1 Tbls) Seal each artichoke tightly in foil and place in a 400º oven for approx. 70 mins. Meanwhile melt butter and sprinkle in more Garli Garni. When ready to serve place melted Garli Garni butter in a bowl alongside artichoke for dipping. Easy & delicious!

1/2 jar Garli Glaze
1/4 C apple cider vinegar
1/4 C water
1/4 C olive oil
Shake in jar or blender.
Salad: Baby spinach & greens, thin sliced red onion, crisp fried bacon, crumbled toasted chopped pecans, sliced thin tart apple, chopped hard boiled egg.
Toss greens, onion (to taste), apple & pecans with enough dressing to lightly coat. Garnish with bacon & egg.
