I'm always looking for new ways to use zucchini, a vegetable that I've always thought might be the key to world hunger. Plant one or two of these plants and you can supply the neighborhood.
They are, however, packed with things that are good for you and can be included in many delicious recipes.

Marinated Zucchini and White Bean Salad

2 medium zucchini halved lengthwise and sliced into 1/2 inch pieces
1 14 oz. can of while beans, drained & rinsed
juice and grated rind of 1 lemon (unwaxed) 3-4 tbsp.
Garlic Festival Garlic Olive Oil or Garlic Chili Olive Oil
salt & pepper

Cook the zucchini in salted boiling water briefly (2-3 mins.) Drain and refresh under cold running water. ~ Place the zucchini in a bowl with the beans and add the remaining ingredients, tossing gently.
Optional ~ add a tbls. of fresh chopped herbs such as basil, oregano or mint. Each will add it's own distinctive flavor. Chill and serve as a salad or accompanying meat fish or chicken.
