Garbanzo beans (also known as chickpeas and Egyptian peas) have a delicious nut like taste and buttery texture. They provide a concentrated source of protein that can be enjoyed year-round and are available either dried or canned.
Garbanzo beans are also an excellent source of molybdenum and manganese. They are also a very good source of folate and copper as well as a good source of dietary fiber, phosphorus, protein, iron, and zinc.
The following is a simple and delicious way for the whole family to enjoy this delicious healthy food and a great substitute for other not so healthy snacks. I love things that are crunchy and spicy. These roasted (Garbanzos) chickpeas are both, plus are a healthy snack. Just toss them with a little olive oil and some seasonings, then roast in the oven until crunchy. They’ll stay crispy for a few days stored in a resealable bag or jar.
- 2 (15-ounce) cans chickpeas, also known as garbanzo beans, thoroughly drained, rinsed and DRIED (about 3 cups)
- 2-3 tablespoons Garlic Festival Garlic Olive Oil or Chili Olive Oil
-1 Tbs Garli Garni or to taste
Optional: add 1 Tbs finely chopped oregano or rosemary and/or a sprinkling of curry powder. (experiment with other flavors such as Cajun, Mesquite Grill or even cinnamon & sugar.
Heat the oven to 400°F and arrange a rack in the middle.
Place the chickpeas in a large bowl and toss with the remaining ingredients until evenly coated. Spread the chickpeas in an even layer on a rimmed baking sheet and bake until crisp, about 30 to 40 minutes tossing occasionally.
