Pronounced Keen-wah for those who are new to this wonderful grain (seed). Unlike most other grains, it is a source of whole protein & is a great replacement for rice. It has a great fluffy texture when properly prepared, comes in different colors and has a great nutty flavor.
1/2 onion, minced
1 cup quinoa, rinsed & drained
1 1/4 cup chicken or vegetable broth
2 Tbs. minced fresh herbs such as basil, thyme, cilantro, etc.
1/2 cup frozen corn
1/2 cup diced tomatoes
1/4 cup chopped brussel sprouts
1/4 cup diced avocado
Combine the onion & oil in a med. saucepan. Cook over med. heat for approx. 10 mins., stirring occasionally. Stir in the quinoa & cook over med. heat until lightly toasted. Stir in the broth, herbs, and Garli Garni, reduce heat & simmer for 16-18 mins. Stir in the corn, tomatoes, brussel sprouts and avocado. If you like, you can add pieces of cooked chicken for a nice flavor and texture. Cover pot a let sit for 10 mins. Fluff with fork & serve as your side dish.
