Prep Time: 15 Minutes
Cook Time: Approximately 38-52 minutes
Total Time: Approximately 53-67 Minutes
Yield: 2 Services

Ingredients:
2 chicken breaks (boneless, skin-on)*
1 tbsp. unsalted butter
2 tsp. Sesame Oil
2 tsp. fresh ginger, minced
1 bulb fresh garlic
3 tbsp. low-sodium soy sauce
2 tbsp. mirin
4 cups rich chicken stock
2 large eggs
½ cup scallions sliced
2 (3 oz) packs dried ramen noodles
Fresh jalapeño sliced (optional)

Directions:

1) Preheat the oven to 375 degrees. Season chicken generously with Garlic Festival Smoked Oak Santa Maria Garlic Rub & Seasoning. Melt the butter in a large oven-safe skillet over medium heat. Add the chicken, skin-side down and cook about 5-7 minutes until the skin is golden brown and comes off the pan easily. Flip the chicken over and cook for another 4-5 minutes until golden brown. Transfer the skillet to the oven and roasted for 15-20 minutes until the chicken is cooked through. Remove from the oven, transfer the chicken to a plate and cover with foil until ready to serve.

2) Now we are ready to make the ramen broth. Heat the sesame oil and Garlic Festival Fire Roasted Olive Oil in a large pot over medium heat. Add the garlic, ginger and cook for a few minutes until soft. Add soy sauce and mirin. Stir to combine and cook for another minute. Add the stock, cover and bring to a boil. Remove the lid and let simmer uncovered for 10-15 minutes. Season with Garlic Festival Foods Smoked Garlic Sea Salt to taste.

3) Chop scallions and slice chicken into thin pieces. Toss the chopped scallions and sliced chicken into ramen broth. Add the ramen noodles to the simmering broth and cook for 4-5 minutes or until soft. Top with fresh scallions and jalapeños (optional).

*Add tofu and sweet corn for a wonderful flavor enhancement.
